We can hardly find anyone who doesn’t like cakes or cheese. And together they make an ineffable combination. But cake doesn’t always mean ‘bake’! So here is a step by step recipe to make a Blueberry cheese cake.
1.Take 100 ml of water in a pan.
2.Add 2 teaspoon of gelatin to the water and mix it. Keep it aside for a while.
3.Take ¼ cups of blueberries in a bowl and mash them gently.
4. Add 1 tablespoon of sugar to the mashed blueberries. Cook the mixture in medium heat for a few minutes.
5.Take this blueberry sauce into a bowl and keep aside.
6.Take 180 gm of any biscuit and blend the biscuits coarsly in a mixture grinder.
7. Keep the grinded biscuits in a different bowl and add 100gm of unsalted melted butter. Mix it well.
8. Transfer it into a spring form mould and spread it evenly. Press the base tightly with the help of a glass and refrigerate it for 30 minutes.
9. Take 200ml of heavy cream or whipping cream in a bowl and blend it properly.
10. In a separate bowl, take 200gm of cream cheese and blend it smoothly. Add 100gm of powdered sugar to it and mix it well.
11.Add 2 teaspoon of lemon juice to it and mix it again.
12. Add the whipped cream to the mixture and blend it again.
13. Now melt gelatin for few seconds on low flame and add then add the gelatin to the cheese mixture.
14. Now pour the mixture over the grinded biscuit and add some blueberry sauce on it. Refrigerate it for 4 hours and your cheese cake is ready to be served!
